Ingredients:

2 kilos of sweet potatoes
1 liter of water
1 ½ kilos of sugar
1 tablespoon of lemon juice
1 teaspoon of cinnamon
1 teaspoon of vanilla

Directions:

1. Peel the sweet potatoes and cut them in to small slices.
2. Boil them in a small casserole dish with the lemon juice (this is to keep them from darkening).
3. In a big casserole dish put the water, sugar and the vanilla. Boil it at a low temperature for ½ hour, this is to prepare the syrup.
4. Take the sweet potatoes, drain them, add them to the large casserole dish full of syrup.
5. Let them cook until the syrup becomes thick and the sweet potatoes are cooked.
6. Remove the dish from the heat.
7. Add the cinnamon to the dish.
8. Let the mixture cool before serving it. It can also be bottle or packaged.
